Marinated Rice Salad

A great way to use up some leftover rice

  • 2 cups of cooked rice
  • 2 Tbs. of finely chopped onion or shallots
  • 1/2 finely chopped red pepper
  • 1/4 cup of shredded carrot
  • 1/2 cup of fresh peas
  • 1/2 cup of Italian dressing

Mix all ingredients except the dressing until fully mixed. Add 1/4 cup of salad dressing and mix thoroughly. Chill until ready to serve. Add remainder of salad dressing before serving. The rice will soak up as much salad dressing as you let it, so every time you serve it you will have to add a little more dressing.
